How to
Preheat the oven to 350F. Lightly grease an eight-inch round baking dish with oil and set aside.
Combine all ingredients for the cake in a mixing bowl, except for the butter.
Melt the butter and pour it into the mixture. Use an electric mixer for easier mixing until all ingredients are well incorporate and the mixture doesn’t have lumps.

Pour the cake batter into the prepared baking dish.

In the other mixing bowl, combine cinnamon, coconut flour, butter, and powdered sweetener. Mix well until it forms the crumble.

Using a spoon, sprinkle the cinnamon crumble over the first layer, covering the whole surface.

Bake in the oven for 35-40 minutes. Once ready, top the cake with more ground cinnamon. Cut into pieces and serve. Enjoy!

For the cake
- 1 cup almond flour
- ½ cup butter melted
- ½ cup coconut flour
- 1 egg beaten
- 3 tbsp erythritol powdered
- 1 tsp vanilla extract
- 2 tsp baking powder gluten-free
- 1 tsp instant espresso
- A pinch of salt
For the second layer
- 2 tbsp cinnamon
- ½ cup coconut flour
- ½ cup butter
- 1 tbsp erythritol powdered
For the top
- 1 tbsp cinnamon
Instructions
- Preheat the oven to 350F and grease an eight-inch cake pan with oil.
- In a medium-size mixing bowl, combine all ingredients for the cake, except for the butter.
- Melt the butter then pour it into the mixture. Use an electric mixer to whisk everything until the mixture is without lumps.
- Pour the batter in the pan and set aside.
- Mix all ingredients for the second layer- cinnamon, coconut flour, butter, and sweetener until the cinnamon crumbs form.
- Spread over the cake layer, covering the whole surface.
- Bake in the oven for 35-40 minutes.
- Top with more ground cinnamon and cut into ten pieces. Enjoy!
