Rayane Chehab


Rayane Chehab, MS, RDN, is a registered dietitian nutritionist with 10 years of diverse experience in the fields of clinical nutrition and food science. She received her Master’s Degree in Food Science and Technology along with clinical and industrial internships. Rayane has a peer-reviewed publication in the International Journal of Food Microbiology and many contributions in health and nutrition related magazines. She enjoys using her culinary skills to develop nourishing and delicious recipes to help people live longer, healthier and happier lives. Her core philosophy is all about the holistic approach and focusing on “real” food ingredients rather than “diet” foods.

Shelby Cook

Shelby Cook


Shelby Cook, BS, DI, is a dietetic intern at Texas A&M University – Kingsville with over 6 years experience working in health community and assisting in low-income minority communities. She completed her Bachelor of Science degree in Nutrition and Food Science and finished her Master of Science degree in Human Sciences, but will be officially walking the graduation stage in May 2020. She is a full-time dietetic intern and will officially be a Registered Dietitian Nutritionist and Licensed Dietitian Nutritionist in May 2020. She has extensive research experience in the field of Food Science, specializing in the migration of high-molecular weight phthalates from food packaging into high-fat foods. She is the founder and president of the Corpus Christi Nutrition group, providing free and evidence-based nutrition information to the general public. She believes that high-quality nutrition data and research should be accessible and easy to understand for all people, no matter the education level or socio-economic status. She plans on moving on to obtain a PhD from Texas A&M University, College Station, where she hopes to work as a professor and researcher, expanding upon the field of Nutrition and Dietetics.


Zlata Radivojevic


Zlata Radivojevic is a registered dietitian nutritionist with 3 years of experience in the field of her specialty. She obtained her degree in Dietetics and Chemistry at the University of Belgrade, Faculty of Medicine. In the past few years, she uses and upgrades her knowledge as a nutritionist and dietitian in a healthy food restaurant in Belgrade. Her main focus is to help people with insulin and sugar problems. In her spare time, she enjoys researching and exploring different food recipes and diets.


Eiselle Joyce R. Hidalgo


Eiselle is a faculty member at the University of Santo Tomas where she teaches professional subjects for BS Food Technology and BS Nutrition students. Her previous work experiences include the field of food flavor research and development with a focus on sweet and savory product applications and food profile matching. She also niche in the field of baking and pastry arts where she got her sugar arts training at the Queen of Hearts Couture Cakes in London, UK and Let Them See Cake in Cardiff, Wales, UK. She holds a bachelor’s degree in Food Technology from the University of Santo Tomas and a post-graduate diploma in Land Valuation and Management at the University of the Philippines. She is currently a candidate for the MS degree in Microbiology in UST, working on a research on probiotics and its potential as food biopreservatives.


Stefanija Lekoska

RN, medical student

Stefanija Lekoska is a registered nurse, and a medical student (MD). She graduated in 2018 at the Nursing Highschool “St. Kiril and Metodij ” in Ohrid, Macedonia. Her six month residency as a nurse was spent in the Surgery and Anesthesiology Unit at the General Hospital in Ohrid, and one month practice in a Geriatric Care Facility “Orpea” in Las Rosas, Madrid, Spain. In 2018 she started a six year General Medicine (MD)  program at the University “St. Kiril and Metodij” in Skopje, Macedonia and is currently in her second year of studies. Stefanija is very passionate about medicine and nutrition and is exploring and expanding her knowledge on those passions everyday. In her free time she enjoys a good book and catching up with friends over coffee.
