Six balls with three different flavors combined into one, starting with coconut and rolling into dark chocolate and ground peanuts. Imagine that one bite that is delicious, keto-approved and sugar-free.
Keto cheesecake balls are one of the desserts you will want to make over and over again since they are easy to make in less than 15 minutes.
You can store them in the fridge and prepare yourself for sugar cravings. Or you can eat them right away, that’s up to you!
For this recipe, you need cream cheese, coconut butter, dark chocolate, and peanuts. For easier combining, use cream cheese that’s on the room temperature for a while. Melt coconut butter in the microwave.
By doing those easy steps at the beginning, you won’t need an electric mixer later. One spoon is going to be way enough when it comes to the cheesecake filling.
You can make coconut butter on your own. All you need is a food processor and unsweetened shredded coconut. Simply put coconut into a food processor and blend for a while or until you get that nice creamy texture.
Maybe you will have to use a good quality food processor because not all of them are designed for this recipe. When you make the butter, add in whatever you want, such as stevia, vanilla or maybe dark chocolate.
Make your life as simple as you can. By making our Keto cheesecake balls you are one step closer to that lifestyle. Let’s make the recipe.
In a small mixing bowl combine powdered erythritol, full-fat cream cheese, and coconut butter.
Like we said at the beginning, let the cream cheese at the room temperature and melt coconut butter in the microwave. They are going to be soft and easy for mixing.
Use a spoon or a fork and combine them. Make 6 balls on a plate. The shape of a ball is not important right now because the mixture is still soft.
Put them in the freezer for 5 minutes. Blend dark chocolate and peanuts and transfer into a small bowl.
Get cheesecake balls from the freezer and improve the shape with your hands. You will see the filling become easier for rolling. Simply roll each ball into a chocolate-peanuts mixture.
Squeeze gently with your hands as you roll them so that the chocolate and peanut pieces are glued to the cheesecake.
