This Green Chicken Enchilada Cauliflower Casserole is a complete dish. It’s soft and very spicy. If you like Mexican food, then this is a delicious option. It features cauliflower, the low-carb vegetable, loved by everyone.

How To

Start by preparing the cauliflower. Wash it and cut it into small pieces. Place the cauliflower chunks in a microwavable bowl with a quarter cup of water and cook for five minutes.

You can also cook the cauliflower on the stove, but it may take a bit longer. Drain the excess water from the cauliflower and pat dry.

Mix together the chicken, cream cheese, sour cream, cheddar cheese, green chili and salt and pepper in a bowl.

Place the mixture into four small bowls.

Cook in the oven for 20 minutes at 300 degrees. Remove from the heat, add some more cheddar cheese, and bake for five more minutes or until the cheese is melted. Serve hot!

  • Clean the cauliflowers, cut into small pieces and cook with your favorite method. In our case, we place it in the microwave with a quarter of a cup of water and use the “cooking” function for 5 minutes until they are tender. Drain the excess water from the cauliflower.
