Clean the cauliflowers, cut into small pieces and cook with your favorite method. In our case, we place it in the microwave with a quarter of a cup of water and use the "cooking" function for 5 minutes until they are tender. Drain the excess water from the cauliflower.
In a bowl, mix chicken, cauliflower, cheese, green chili, cream cheese. Season with salt and pepper. Place the mixture into four bowls.
Bake for 20 minutes at 300F. Remove from the oven and cover with a little extra cheddar cheese and grill for five more minutes.
