Keto Baked Avocados with Eggs, Cheese and Bacon Fillings

It is very simple to prepare and serves for both, an entree and a good weekend breakfast. There is nothing better than seeing how the egg yolk melts inside the avocado.

Avocado is also an excellent source of potassium (more than a banana without the sugar) and fiber. The combination of creamy avocado with salty bacon, eggs and cheese is unbeatable.

The best part is that you can cook the egg right in the center of the avocado! We recommend buying organic, pasture-raised eggs because they contain the highest amounts of omega 3 fatty acids and other important nutrients. 

Also, look for a “clean” source of bacon that contains no antibiotics, nitrates and added sugars. This is hard to find because most store-bought brands of bacon contain preservatives and sugar to keep them “fresh.” This is especially true for smoked bacon. 

You may want to visit your local butcher for the freshest cut of bacon, or find a store-bought brand that has “Whole30 approved” on its label. This means it won’t contain added sugars and will likely be from a clean source.

You can save yourself time in the morning by cooking your bacon the night before. Then all you have to do is crack the egg into the avocado, cook it, and sprinkle with bacon and cheese!

How To

Start by washing the avocado very well and prepare the eggs, bacon and cheese.

Slice your avocado in half with a sharp knife and remove the seed or pit.

You’ll also need to remove about two spoonfuls of the fruit to make room for the egg.

Coat the avocado halves in olive oil and sprinkle with salt and pepper. 

Then, crack an egg into the center of the avocado. If you want to spare the avocado fruit, then you can always crack just the egg yolk into the hole because it’s smaller.

Bake for 25 minutes until the egg is cooked and the cheese is lightly browned.

  • Preheat the oven to 300F. Wash the avocado and chop it in two. Remove the seeds and about four tablespoons of pulp. (You can use 2 small avocados instead of 1 large)
  • Chop the cheese and bacon into small pieces.
  • Put the halves of avocado in a baking dish and sprinkle with olive oil.
  • In the center of each avocado, pour two eggs, and cover with cheese and bacon.
  • Bake for about 25 minutes or until the cheese is browned.
