Keto Creamy Avocado Soup

Not many people think to add avocados to soup, but they provide a great source of nutrients and also a creamy texture. Our recipe combines avocado with heavy cream, spices, chicken stock, and lime juice. 

You can easily substitute chicken broth for bone broth in this recipe to enhance the nutrition content even further. Prepare this soup anytime you need to get over a cold quicker as the garlic will help naturally detoxify the body. 

Or enjoy it as a weeknight appetizer to a heavier meal. It pairs well with meat-based dishes or you can serve it in place of a salad before your main entree. 

How To

To make, start by preparing the ingredients.

Chop the coriander and green onion. Mince the garlic clove and cut the avocados into small cubes.

Melt butter in a medium sized pan on the stove. Add onion and garlic and cook until they are soft (about 3-4 minutes).

Then add the avocado cubes in a stir around.

Next, add heavy cream, bone broth and lime juice. Season with cumin, salt and pepper. Bring to boil then remove from heat. Let it cool down a bit then add everything in a blender. Blend until creamy and smooth.

Pour the soup into a bowl. Top with extra coriander and serve warm.

Ingredients

  • 2 avocados ripe
  • 1/2 oz green onion fresh
  • 1/2 oz coriander fresh
  • 1 clove garlic minced
  • 1 tbsp butter
  • 4 cups chicken broth
  • 1 tsp lime juice
  • 1 oz heavy cream
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Prepare all the ingredients before starting to cook. Chop the green onion and coriander finely. Mince the garlic clove. Peel and cut the avocados into small pieces.
  • In a pan over medium heat, add the butter in. When butter is melted, add the onion and garlic and cook for about 3 minutes.
  • Now add the avocado pieces in and give it a good stir. Add chicken stock, heavy cream and lime juice (or lemon juice). Add salt, pepper and spices.
  • Remove from heat, let it cool down a little bit then blend the soup in a blender until you achieve a homogeneous creamy texture. Serve warm hot and add some coriander for decoration.

Notes

*If you’d like to, you can add some shredded cooked chicken meat in for extra protein and serve this as a main dish.
