These wonderful and quick cupcakes are prepared in their own cup, they are an excellent choice when cooking a dessert without the messy and dirty remains in the kitchen, since all it takes is mixing all the necessary ingredients with a fork in a cup and baking them for 1 minute in the microwave oven.

In this recipe we are using almond flour instead of regular flour, for many reasons. It has an amazing taste in baking, the oil in it is really stable on high temperatures, as well as the nutritious benefits it provides.

Some of the things you want to monitor when baking with almond flour, is storage. Due to its high levels of fat, rancidity could be a major issue. Preventing oxidation, which leads to rancidity, is achieved by using air tight containers and storing the flour in the fridge or in the freezer.

Use a small bow to mix coconut milk, coconut oil and the egg.

Start by adding a small amount of almond flour and gradually increasing the quantity.

Next, add sweetener, baking powder, cinnamon powder and cocoa powder.

Add the chocolate chips and orange zest. Stir well.

Pour the mixture equally into two mugs and microwave for 45 seconds to 1 minute.

  • Mix all the liquid ingredients in a small bowl: coconut milk, coconut oil and the egg. Stir well.
  • Then, little by little, add the solid ingredients, first the almond flour, then the sweetener, baking powder, cinnamon powder and cocoa powder (sieved with a strainer wherever possible). Blend the mixture If a smoother or softer consistency is desired.
  • Finally, add the chocolate chips and orange zest. Stir with a spoon.
  • Divide into two equal portions in two cups and allow them to bake from 45 seconds to 1 minute in a microwave oven depending on the power setting. Never fill the cup above half of its capacity to avoid spills.
  • Enjoy the hot serving.
