How To

Melt the chocolate with a microwave of a double boiler. Keep stirring the mixture every 20 to 30 seconds so as not to burn the base.

Pour the melted coconut oil and a pinch of salt in the chocolate. Mix until smooth.

Put some lines in your mini cupcake pan. Spread a tablespoon of melted chocolate in the bottom of each cup. Let sit to cool.

Mix the peanut butter with sweetener and leave in the microwave for half a minute.

Distributed the peanut butter mixture in the cups and chill in the fridge for about 5 minutes to set.

Spread one tablespoon of chocolate on the buttercups and top with peanuts. Leave in the fridge again until ready.

  • Use a microwave or a double boiler to melt the chocolate. Stir every 20-30 seconds, this will help not to burn the base.
  • Add melted coconut oil, a pinch of salt and stir well.
  • Fill a mini cupcake pan with liners and fill the bottom of each cup with 1 teaspoon of melted chocolate. Allow cooling.
  • Add sweetener to the peanut butter, stir to combine and microwave for 30 seconds.
  • Divide the peanut butter between cups and refrigerate for 5 minutes or until set.
  • Add another tablespoon of chocolate and put a peanut on top of each (if using) and transfer to the fridge till set and ready.
  • Unmold and enjoy!
