dark chocolate
at least 85% cacao, chopped
1
tbsp
coconut oil
melted
4
tbsp
peanut butter
2
tbsp
erythritol
or any other sweetener of your choice
pinch
sea salt

Instructions
Use a microwave or a double boiler to melt the chocolate. Stir every 20-30 seconds, this will help not to burn the base.
Add melted coconut oil, a pinch of salt and stir well.
Fill a mini cupcake pan with liners and fill the bottom of each cup with 1 teaspoon of melted chocolate. Allow cooling.
Add sweetener to the peanut butter, stir to combine and microwave for 30 seconds.
Divide the peanut butter between cups and refrigerate for 5 minutes or until set.
Add another tablespoon of chocolate and put a peanut on top of each (if using) and transfer to the fridge till set and ready.
Unmold and enjoy!
