A great gut-friendly ingredient we will be using is butter, make sure to choose a grass-fed one since it has a significant amount of dietary butyrate, which is excellent for the colon. Prepare everything you need for donuts and place it on the kitchen table.
Melt the butter in the microwave for 1 minute (or more, if needed). In a large mixing bowl combine all dry ingredients coconut flour, hazelnuts, almond flour, baking powder, and erythritol. Add melted butter.
Use an electric mixer and mix until everything is well combined.
Add in one egg at a time. If the mixture is too thick, add one tablespoon of water.
Place one tablespoon of the mixture in a silicone pan or use a piping bag.
Bake for 15 minutes.
For the topping in a medium bowl, whisk the heavy cream until fluffy. Add the cocoa powder and erythritol and whisk again.
Dip the top of each donut into the creamy mixture and then in the ground hazelnuts. Serve and enjoy!
Keto Chocolate Hazelnut Donuts
- ½ cup heavy cream
- 1 tsp cocoa powder
- 1 tbsp powdered erythritol
- Hazelnuts ground
- Preheat the oven to 400F.
- In a large bowl, combine coconut flour, ground almonds, hazelnuts, cocoa powder, sweetener, and baking powder. Microwave butter and add in the mixture. Mix with an electric mixer.
- Add one egg at a time and whisk.
- In a silicone donut pan add one tablespoon of the mixture. I got 11 small donuts.
- Bake for 15 minutes.
- Make your topping. Combine heavy cream, cocoa powder, and erythritol. Dip the top of each donut.
