What is stevia?
Stevia is a plant that is native to South American and it is a part of the sunflower family. The stevia plants’ leaves are used to create a sweetener that is used as a substitute for table sugar-sucrose. (*)
Stevia gets its sweetness from the active compounds that it contains called steviol glycosides. These active compounds cannot be metabolized by the human body, so stevia has no calories, no carbs and it doesn’t affect blood glucose or insulin response.
Stevia has been used for centuries because it is up to 300 times sweeter than common sugar. Its leaves can be dried and ground into a powder and used in that way or they can be used to create stevia leaf extract which is most common for commercially used stevia.
How does Pyure make its stevia extract?
Around 90% of stevia is grown in China and Pyure sources both stevia and erythritol from USDA Organic Certified and non-GMO Project Verified crops and they have received SQF (Safe Quality Food) Level 3 Certification- the highest you can receive.
They first harvest and dry the highest quality stevia leaves and then the leaves go through a process that is similar to steeping tea in order to extract the sweetest part of the leaf and to avoid bitterness.
What is left is a white powder called Reb-A that is up to 350 times sweeter than sugar.
What is erythritol?
Erythritol is a sugar alcohol commonly used as a food additive and a substitute for table sugar- sucrose. (*)
It is produced commercially by enzymatic hydrolysis of starch that came from corn in order to get glucose. The glucose is then fermented with yeast or another fungus to get a final product- erythritol. (*)
Most countries label it as a calorie-free additive and sugar substitute, but in the United States, it is labeled 0.2 calories per gram, which is 95% less than sugar and most carbs.
Erythritol is absorbed in the body, but it leaves the body by excretion chemically unchanged, therefore it doesn’t have any nutritional value. It doesn’t affect blood sugar levels or insulin response and that’s why it has been commonly used as a keto-friendly sweetener in sugar-free products.
Can You Eat Pyure Products On The Keto Diet?
As we can see from the table above, most of Pyure products have no net carbs or calories, except the Organic Hazelnut Spread that has 2 grams of net carbs per serving and the Sugar-Free Harmless Hunny that has 4 grams per serving, which are still low-carb.
The Organic Hazelnut Spread also contains sunflower oil, and both products contain tapioca fiber, which are both generally avoided on a strict keto diet.
