Ingredients
For the cookie dough

cup
coconut flour
1
tbsp
almond flour
2
tsp
baking powder
2
tbsp
erythritol
powdered
2
eggs
2
oz
cream cheese
full-fat, melted
For the filling

tbsp
water

erythritol
powdered

cup
pistachios
ground, or other nuts

Instructions
Preheat the oven to 350F.
In a bowl, combine almond flour, coconut flour, baking powder, and sweetener.
Add in melted cream cheese then beat with an electric mixer.
Add in eggs one at a time and continue to beat until everything is fully combined.
Use a spoon to transfer the batter to make ten cookies on the parchment paper. Bake them in the preheated oven for 15 minutes.
In the mean time, prepare the topping simply by beating water, ground pistachios, and butter.
Once the cookies are baked golden, let them cool completely then top them with the creamy topping and more chopped pistachios. Enjoy!

*You can use other keto-friendly nuts of your choice instead of
pistachios.
