Instructions
Preheat the oven to 350F.
Combine all ingredients in a big mixing bowl and whisk with an electric mixer.
Let it sit on a counter for a while until the coconut flour absorbs some of the moisture.
Use a silicone mini muffin pan. Fill about ¾ each cup with the egg and cheese mixture.
Bake for 15 minutes.
