Preheat the oven to 390F. Line a baking pan with parchment paper. Set aside.
In a mixing bowl, combine mayonnaise, parmesan cheese, vinegar, and water. Stir well.
In another mixing bowl, mix coconut flour, almond flour, rosemary, smoked paprika, salt and pepper.
Cut chicken breast into small bite-sized pieces. Dip each chicken nugget into the mayonnaise and cheese mixture, then coat it with the dry mixture. Transfer them on the parchment paper and bake in the oven for 15-20 minutes.
